I'm a picky eater, always have been always will be. I do try things at least once... most of the time. I don't eat meat on the bone it really grosses me out.

These muffins are super easy to make and good for you too!

Ingredients
Nonstick cooking spray
2 cups quick oats (process in food processor)
1 cup flour
2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
1 egg lightly beaten
3/4 cup mashed ripe banana
1/2 cup fat-free milk
1/4 cup honey
2 Tablespoons cooking oil
1/2 cup semi sweet chips
1. Preaheat oven to 400F Coat the muffin pan with the cooking spray. In a medium bowl combine all dry ingredients and make a well in the center of the bowl.
2. In another bowl, stir together all the wet ingredients. Add the mixture all at once to the flour mixture. Stir just until moist, may be lumpy. Spoon batter into muffin pan about two-thirds full.
3. Bake 14 to 16 min or until golden brown and when you insert a tooth pick it comes out clean.

167cal, 6g fat, 18mg chol., 125 mg sodium, 30g carbo, 3g fiber, 4g pro

My muffins seemed dry so I think next time I would boost my milk up to 3/4 cup milk. They are pretty good, I mean I’m used to eating sweet muffins so they might take some getting used to.

I wanted to bake something today since I had off and I found a recipe for lemon raspberry muffins. I didn’t have any raspberries, but I did have left over blueberries from the last set of muffins I made and they worked just as well!

Per muffin: 185 calories; 7 g fat (1 g sat, 4 g mono); 18 mg cholesterol; 27 g carbohydrates; 4 g protein; 2 g fiber; 245 mg sodium; 42 mg potassium

Ingredients-
•3/4 cup unsweetened applesauce add to shopping list
•1/3 cup packed brown sugar
•2 egg whites
•1 egg
•2 tablespoons oil
•1 teaspoon vanilla
•1 1/2 cups all-purpose flour
1/2 cup whole wheat flour
•1 1/2 cups shredded carrots
•2 teaspoons ground cinnamon
•1 teaspoon baking powder
•1 teaspoon baking soda
•1/2 teaspoon salt
Streusel topping-
2 Tbs butter spread
2 Tbs brown sugar
2 Tbs whole wheat flour
Directions-
1.Preheat the oven to 400°F. Coat a 12-cup no-stick muffin tin with no-stick spray.
2.In a medium bowl, combine the applesauce, brown sugar, egg whites, egg, oil, and vanilla. Mix well.
3.In a large bowl, combine the flour, carrots, cinnamon, baking powder, baking soda, and salt. Mix well. Add the applesauce mixture. Stir until just blended. Pour into the prepared muffin tin, filling the cups three-fourths full. Make streusel topping by mixing the remaining cinnamon, butter spread, and flour. Sprinkle ontop of the muffins before they go in the oven.
4.Bake for 15 to 18 minutes, or until a toothpick inserted in the center of a muffin comes out clean.
Number of Servings: 12

So I searched all over for a carrot muffin and found one and changed it a little. I took out the raisins and nuts because I don’t like raisins and the nuts just add fat which I didn’t want to add. I did add the streusel topping which really was a great addition. They are so eary to make and taste great! This is my favorite recipe that I have made by far.

I made these the other day with the recipe from the Healthy Blueberry muffins. All I did was swap out the blueberries and put in 1cup chopped cranberries and some orange zest. You can find the recipe for the Healthy Blueberry muffins on this blog just look in the older posts.

Yes they do exist and their super easy to make, all you add is water!

I also decided to add some peacan chips for some crunch, I only added 3 Tbs.

These muffins have 140 calories, 0 fat, 2 grams of fiber and 2 grams of protein!
