So I searched all over for a carrot muffin and found one and changed it a little.  I took out the raisins and nuts because I don’t like raisins and the nuts just add fat which I didn’t want to add.  I did add the streusel topping which really was a great addition.  They are so eary to make and taste great!  This is my favorite recipe that I have made by far.

Healthy Chocolate Chip Pumpkin Bars

These pumpkin bars are really yummy and a great mid day treat!  I found the recipe online and made them more healthy by adding some whole wheat flour instead of all white and I cut out 1/4 cup sugar.  I used mini chips which means there is a lot more in every bite and you could probably even cut them back a little since you are using mini.

Ingredients-

3/4 cup sugar
1 cup canned pumpkin
1/4 cup unsweetened applesauce
1/4 cup fat-free yogurt
2 large egg whites
1 cup all purpose flour
1/2 cup whole wheat flour
1 tsp ground cinnamon
3/4 tsp salt
1/2 tsp baking soda
1/2 cup semisweet chocolate chips
cooking spray

Directions-

Preheat oven to 350*
Combine first 5 ingredients in a large bowl, stirring well with a whisk. In a medium bowl, combine flour, cinnamon, salt, and baking soda. Add flour mixture to pumpkin mixture, stirring just until moist. Stir in chocolate chips.
Spoon batter into a loaf pan coated with cooking spray. Bake for 40-45 minutes or until a wooden pick inserted in the center comes out clean. Cool 10 minutes in pan, then remove. Cool completely on wire rack. Makes 18 slices

Number of Servings: 18
